This recipe comes from my father, hence the name. It is a long time family favorite recipe that until now I have never shared or used as part of our catering business. I have fond memories growing up with this recipe and my dad preparing his favorite dressing. I share it with you now as part of this worthy cause to assist people in our community who are “food insecure.”
In a sturdy bowl add each ingredient one at the time. Stir well to incorporate ingredients, but do not over stir.
3 tbsp dijon mustard
3 tbsp malt vinegar
9 tbsp walnut oil
1 tbsp chopped garlic
Grey salt and pepper to taste
Walnut oil can be replaced by olive oil if needed.
Keeps in the refrigerator for several weeks. Give a quick stir to refresh the oil with the rest of the ingredients. Rest few hours before serving it so the full flavor comes out.
For extra walnut flavor, get some walnut and chop in a blender with some walnut oil and add it to the vinaigrette.
You can also add some fresh chopped parsley just before serving. Amazing with a cold salad of green beans, potatoes eggs, and shallots.
Dressing goes great on:
• Lettuce salad
• Tuna salad
• Mixed cold vegetables
• Avocado and shrimp
• Cold or warm asparagus
Play with it and have fun!
